Swiss Chard
Ingredients
2 pounds fresh Swiss chard, or collard greens, turnip or mustard greens, beet tops, spinach or broccoli
1/8 tsp. salt
2 tsp. virgin olive oil
4 lemon wedges
1 pound toasted sesame seeds
Cooking Instructions
Trim chard of any damaged leaves and tough stems. Wash well to remove all sand. In a large saucepan, bring about 1/2-inch of water to a boil; drop in Swiss chard leaves. Return to a boil. Cover and cook 2 to 3 minutes until leaves are tender. Add salt; remove from heat. Drain, reserving 1/4 C. of cooking liquid. Add oil to reserved liquid. Pour desired amount over chard before serving. Serve each portion with a lemon wedge and sesame seeds.
