Sweet Potato Fluff
Ingredients
3 C. mashed sweet potatoes (about 3 medium)
1 1/2 C. sugar
2 eggs, beaten
1 tsp. vanilla
1/2 C. milk
Topping:
1/3 C. margarine
2/3 C. light brown sugar
1/3 C. flour
1 C. chopped nuts
Cooking Instructions
Combine first five ingredients. Mix using a mixer. Place in a 9″x9″ square pan. With a mixer, mix together the margarine, sugar and flour . Spread over above ingredients, then add the chopped nuts. Bake 350°for 30 minutes. Note:This can also be made up ahead and kept frozen for up to 2 months without baking until ready to use.
