Swedish Nut Cake 1
Ingredients
2 C. white sugar
2 C. all-purpose flour
2 eggs
1/2 C. chopped nuts
2 tsp. baking soda
2 tsp. vanilla extract
20 ounce can crushed pineapple
8 ounce package cream cheese
1 3/4 C. confectioners’ sugar
1/2 C. chopped nuts
1/2 C. butter or margarine
1 tsp. vanilla extract
Cooking Instructions
Preheat oven to 350. Grease and flour 9×13-inch baking pan. In large bowl, mix flour, sugar, 1/2 C. nuts plus baking soda. Add eggs, pineapple and 2 tsp. vanilla. Beat until smooth and pour into 9×13-inch baking pan. Bake at 350 for 40-50 minutes. Spread icing on hot cake. Icing: In large bowl, cream butter or margarine, cream cheese, 1 tsp. vanilla and confectioners sugar until light fluffy. Fold in 1/2 C. nuts. Spread on hot cake.
