Sesame Chicken
Ingredients
12 oz. poached chicken
1 pound fresh asparagus, or broccoli flowerets
4 green onions
1 Tbsp. sesame oil
2 cloves garlic, minced
2 Tbsp. ginger root, grated
2 Tbsp. fresh lime juice
1 Tbsp. toasted sesame seeds
Cooking Instructions
Cut chicken into strips about 2 inches long. Snap off ends of asparagus and cut diagonally in 1-inch pieces. Julienne the green onions and steam 4 minutes or until tender; remove from heat. In a nonstick pan or wok, heat the oil. Cook garlic and ginger root 30 seconds. Add asparagus, green onions, chicken, lime juice and sesame seeds. Stir fry until asparagus is crisp and tender. Serve with wild rice.
