Savory Salmon Loaf
Ingredients
1 can salmon, drained, skinned, and flaked
2 eggs, slightly beaten
1/2 C. milk
1/2 tsp. salt
1/8 tsp. pepper
1 tsp. lemon juice
1 tsp. chopped fine onion
1 Tbsp. chopped green pepper
2 C. Kellogg’s Special K cereal
EGG SAUCE:
2 Tbsp. margarine or butter
2 Tbsp. flour
1/8 tsp. salt
1 C. milk
2 Tbsp. lemon juice
1 hard boiled egg, chopped
Cooking Instructions
Combine all ingredients in medium size bowl. Mix well. Spread evenly in well greased 9 x 5 x 3 inch loaf pan. Bake at 350 degrees for approximately 30 minutes. Serve hot with egg sauce (see below). Sprinkle with paprika or chopped parsley, if desired.
EGG SAUCE:
Melt margarine in small saucepan over low heat. Stir in flour and salt. Add milk gradually, stirring until smooth. Increase heat and cook until bubbly and thickened, stirring constantly. Just before serving, stir in lemon juice and egg.
