Pumpkin Pie 3
Ingredients
16-oz. can solid packed pumpkin, not pumpkin pie filling
13-oz. can evaporated skim milk
1 egg or egg substitute equal to 1 egg
2 egg whites
1/2 C. biscuit mix (Bisquick now makes low fat version)
2 Tbsp. sugar
8 packets sugar substitute
2 tsp. pumpkin pie spice
2 tsp. vanilla extract
Cooking Instructions
Heat oven to 350 degrees F. Lightly grease a 9-inch pie plate, or spray with pan spray. Place all ingredients in blender, food processor, or large mixing bowl. Blend 1 minute or beat 2 minutes with mixer. Pour in pie pan. Bake 50 minutes, or until center is puffed up.
