Polpettoni (Italian Style Meat Loaves)
Ingredients
2 lb. hamburger
1/2 C. chopped onions
1/2 tsp. salt, optional
1/4 tsp. oregano
1 egg, slightly beaten
2 C. spaghetti sauce (16 oz. jar)
1 1/2 C. cooked rice
1/3 C. chopped green pepper
Cooking Instructions
Mix first 5 ingredients together. Add 1/4 C. spaghetti sauce. On waxed paper or plastic wrap, press meat mixture into 12″ x 7″ rectangle. Cut crosswise into 6 strips. Mix rice, green pepper and 1/4 C. spaghetti sauce. Divide rice into 6 parts, put one portion on each portion of meat (in center). Fold meat over rice, shaping each portion into a mini meat loaf. Put on baking sheet or dish. Spoon 1/2 C. sauce over loaves. Bake for 25 minutes at 450ΒΊ. Spoon remaining sauce over the loaves. Bake 10 minutes more. Makes 6 large servings.
