Pizza Noodle Casserole
Ingredients
7 oz. (4 C.) uncooked wide egg noodles
1/2 pound lean ground beef
1 C. chopped onions
1/2 C. chopped green bell pepper
2 tsp. dried Italian seasoning
1 package (3-1/2 oz.) small pepperoni slices, halved
1 can (2-1/2 oz.) sliced ripe olives, drained
1 can (15 oz.) tomato sauce
1 can (6 oz.) tomato paste
8 oz. (2 C.) shredded mozzarella cheese
1 Tbsp. chopped fresh parsley, if desired
Cooking Instructions
Cook noodles to desire doneness as directed on package; drain. Heat oven to 350 degrees F. In large skillet, cook ground beef, onions and bell pepper 7 to 9 minutes, or until meat is browned and vegetables are crisp tender; drain. Add noodles, Italian seasoning, pepperoni, olives, tomato sauce and tomato paste; mix well. Fold in 1 C. cheese. Pour mixture into ungreased 2-quart baking dish. Top with remaining 1 C. cheese. Bake at 350 degrees F. for 25 to 35 minutes, or until thoroughly heated and cheese begins to brown. Sprinkle with parsley.
