Pineapple Upside Down Cake 1
Ingredients
3/4 C. butter
1-1/2 C. brown sugar
20 ounces pineapple rings in juice
2 cans mandarin oranges and juice
Maraschino cherries
1-1/2 C. flour
1 tsp. baking powder
1/4 tsp. salt
5 eggs — separated
1-1/2 C. sugar
8 Tbsp. pineapple juice
Cooking Instructions
Preheat oven to 375. Use 13×9 pan Melt butter and brown sugar in pan. Arrange pineapple slices, 1 can of the mandarin orange slices and maraschino cherries in any pattern in pan. Set aside. Beat yolks, add sugar, and juice. Add flour, powder and salt. Fold in beaten egg whites and pour on top of pineapple mixture in pan. Bake for 40-45 minutes. Cool 5 minutes and invert on serving plate. Cool completely.
