Pecan Ham Roll Ups
Ingredients
2 C. mashed sweet potatoes
3 Tbsp. melted butter
1/2 C. crushed pineapple
1/2 C. bread crumbs
3 Tbsp. sugar
1/4 C. chopped pecans
6 slices boiled ham 1/8 inch thick
3/4 C. pineapple juice
Cooking Instructions
Combine sweet potatoes, butter, pineapple, crumbs and sugar. Add the pecans and mix well. Spread this over the boiled ham. Roll like a jelly roll. Fasten with toothpicks. Put in buttered baking dish and cover with pineapple juice. Bake in preheated oven at 350 degrees for 20 minutes, basting frequently
