Pasta Salad With Basil Vinaigrette
Ingredients
2 pounds fresh plum tomatoes, cut into 1/2-inch cubes
1/4 C. olive oil
1/4 C. chopped fresh basil leaves
2 Tbsp. balsamic vinegar
fresh ground pepper
1/2 C. chopped red onion
1/2 C. minced red bell pepper
1 pound uncooked pasta
Cooking Instructions
Prepare pasta according to package directions without adding salt; drain and set aside. Combine tomatoes, oil, vinegar and pepper in a large bowl. Combine red onion, red pepper and pasta in a separate bowl. Add tomato mixture to pasta; toss well. Serve.
