Oven Baked Chicken With Cornflake Crumbs
Ingredients
1-1/2 to 3 pounds frying chicken, cut into serving pieces
3/4 to 1 C. cornflake crumbs
vegetable oil
Cooking Instructions
Heat oven 425 to 450 degrees F. Remove skin from chicken parts. Rinse chicken and dry thoroughly. Place chicken on a large, flat platter. Drizzle with oil and turn with fork to coat each piece well. Shake cornflake crumbs on to a large piece of wax paper. Lift chicken with fork, shake off excess oil; coat well on all sides and crannies with the crumbs. Let chicken stand briefly so coating will stick. Warm a large, flat baking pan, lightly oiled. Place chicken parts on pan, not touching. Bake in hot oven for 45 minutes, or more, depending on size of chicken. Serve when ready.
