Oat Meal Cake
Ingredients
1 C. rolled oats
1 1/2 C. boiling water
1 C. white sugar
1 C. brown sugar, firmly packed
1/2 C. shortening
2 well beaten eggs
Oatmeal mixture
1 1/3 C. sifted flour
1 tsp. cinnamon
1 tsp. soda
1/2 tsp. salt
1 stick of butter, melted
1 C. brown sugar
1/2 C. pet milk
1 tsp. vanilla
1 C. coconut
1 C. nuts
Cooking Instructions
Mix the rolled oats in boiling water and let cool. Cream together the sugar, brown sugar and the shortening. Add to it the well-beaten eggs and the oatmeal mixture, sifted flour, cinnamon, soda and salt. Bake at 350 degrees for 35 minutes in a greased and floured pan. Mix together the butter stick, brown sugar, milk, vanilla, coconut, and nuts. Have the broiler heated and put under for 1 minute. Put on cake the while still hot.
