Microwave Chicken
Ingredients
2-1/2 pounds broil fryer chicken
1/2 tsp. salt (optional)
1/4 tsp. ground sage
3/4 C. orange juice
1/2 C. dry white wine
Cooking Instructions
Wash chicken well. Remove all skin and visible fat with a sharp knife and cut into pieces: 2 breast halves, 2 thighs, 2 wings, and 2 legs. Freeze wings, back and neck to use later for making broth. Discard giblets. Place remaining pieces in an 8- or 9-inch dish suitable for microwave use. Sprinkle salt and sage evenly over chicken. Pour orange juice and wine over chicken pieces. Cover with plastic wrap or wax paper. Cook on high for 5 minutes. Reduce heat to simmer; cook for 15 to 20 minutes, or until tender. Serve desired pieces hot with a bit of juice. If a conventional oven is preferred, cover the pan tightly with aluminum foil. Bake at 325 degrees F. for 45 to 60 minutes, or until the chicken is tender, removing foil the last 15 minutes to allow chicken to brown a little.
