Green Rice
Ingredients
2 C. cooked rice
2 C. grated Cheddar cheese
2 C. chopped parsley
3/4 C. butter, melted
1 onion, finely chopped
salt and pepper to taste
2 eggs, lightly beaten
2 C. milk
Cooking Instructions
Preheat oven to 350°. Combine rice, cheese, and parsley. Heat the butter in a skillet and sauté the onion in it until tender. Add to rice mixture and toss. Season mixture with salt and pepper. Combine eggs and milk and pour over rice mixture. Bake for 45 minutes or until set. Serves 8.
