Greek Potato Salad
Ingredients
2 Tbsp. olive oil
2 Tbsp. scallion, chopped
3 Tbsp. bell pepper, chopped
2 Tbsp. wine vinegar
1/2 tsp. oregano
2 C. potatoes, diced
1/4 C. feta, crumbled
2 Tbsp. black olives, pitted, diced
cherry tomatoes, for garnish

Cooking Instructions
Combine olive oil, scallion, green pepper, vinegar and oregano in a skillet. Sauté over medium heat for about 3 minutes, until green pepper is tender. Stir in potatoes, olives, and feta cheese. Toss to mix. Serve warm with cherry tomatoes and whole ripe olives.
