Fish Fry Lite
Ingredients
1 lb. fish
1 (1/4 lb.) pkg. saltine crackers
1/2 tsp. garlic powder
1/8 tsp. pepper
1/2 tsp. Italian dressing
2 eggs
Cooking Instructions
Preheat oven to 350 degrees. Crush crackers in plastic bag to make fine crumbs. Add seasonings to crumbs and set aside. Beat 2 eggs in shallow dish. Dip defrosted fish in egg mixture and shake in plastic bag with crumb mixture one fillet at a time until evenly coated. Place fish in a single layer on cookie sheet (non-stick or lightly sprayed with Pam). Pieces should not be touching. Bake at 350 degrees turning frequently to avoid sticking for a total of 15 minutes, or until golden brown.
