Fillet Roll Ups
Ingredients
6 fillet of sole
1/2 C. scallops, shrimp, or lobster
1/3 C. salad oil
1 Tbsp. onions, chopped fine
1 Tbsp. parsley, chopped fine
Pepper, Garlic powder
Parmesan cheese
Lemon juice
20 Ritz crackers, crushed
Cooking Instructions
Chop scallops, shrimp, or lobster fine; saute in oil with onion, parsley, and seasoning for a couple of minutes. Mix with cracker crumbs. Spread mixture evenly on each fillet; then sprinkle with lemon juice (a few drops), and Parmesan cheese. Roll each fillet jelly roll fashion; skew with toothpicks. Dot each roll with butter; place on pan lined with foil. Cover lightly with foil and bake in preheated oven at 350 degrees for 10 minutes. Remove foil. Cook another 10 minutes or until flaked easily when touched with a fork.
