Dried Apple Applesauce Cake
Ingredients
1/4 C. butter, unsalted
1/2 C. honey
2 eggs
2 Tbsp. water, warm
1 C. fried apples; pureed in blender with 1/2 C. warm water
2 1/2 C. whole wheat pastry flour
1/2 C. cornstarch
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg, ground
1/2 tsp. cloves
1 C. raisins
1 C. walnuts, chopped
Cooking Instructions
Blend butter and honey well. Add eggs, water, and apples. Sift together flour, cornstarch, soda, cinnamon, nutmeg and cloves into first mixture. Blend well. Add raisins and walnuts. Pour into 3 4 1/2 x 8 1/2 x 2 1/2 inch loaf pans which have been buttered and lined with brown paper. Bake at 325 for 45 minutes. Cut into slices and serve each with a spoonful of sweetened whipped cream on top.
