Creamed Kohlrabi
Ingredients
2 bunches young kohlrabi, peeled and diced
boiling salted water
3 Tbsp. butter
1 Tbsp. finely chopped onion
2 Tbsp. flour
1 C. light cream
salt and pepper to taste
1/8 tsp. nutmeg
Cooking Instructions
Place the diced kohlrabi in a saucepan and add boiling salted water to cover. Cover and cook for 15 minutes, or until tender. Drain. Meanwhile, melt the butter and sauté the onion in it until tender. Sprinkle with the flour. Gradually stir in the cream and bring to a boil, stirring. Season with salt, pepper, and nutmeg. Stir in the kohlrabi. Serves 6.
