Cottage Cheese Breakfast Pie
Ingredients
9 inch unbaked pastry shell
2 egg yolks
1/4 tsp. salt
1 (3 oz.) pkg. egg custard mix
3 Tbsp. melted butter
2 egg whites
2 C. cottage cheese
3/4 C. sugar
1/4 tsp. lemon extract
2 tsp. vanilla
3/4 C. milk
Cooking Instructions
Beat cottage cheese, egg yolk, sugar and salt until well blended. Add egg custard mix, lemon extract, vanilla, butter and milk; mix well. Beat egg whites until soft peaks form. Fold into custard mixture. Pour into pastry shell. Bake at 325 for 80 minutes or until knife inserted near center comes out clean. Cool on wire rack for 30 minutes, then chill in refrigerator.
