Cherry Burritos
Ingredients
6 flour tortillas (6 inches each)
1 package (4-serving size) sugar free vanilla cook and serve pudding mix
3/4 C. water
1-1/2 C. cherries, no sugar added, frozen, fresh or canned
2 to 3 drops red food coloring
1/2 tsp. almond extract
butter flavored cooking spray
1 tsp. cinnamon
1 Tbsp. powdered sugar
Cooking Instructions
Preheat oven to 350 degrees F. In medium pan combine pudding mix, water and cherries. Cook over medium heat until thick. Add red food coloring and almond extract. Mix well to combine. Remove from heat. Spray a large cookie sheet or jellyroll pan with butter flavored cooking spray. Evenly divide cherry filling and place in center of each tortilla. Fold one edge over filling; roll tightly to opposite side. Place seam side down on cookie sheet. Spray top of each with the butter spray. Sprinkle with cinnamon. Bake 10 to 12 minutes. Quickly re-spray with butter spray after baking 5 minutes. Remove from oven and dust with confectioners powdered sugar. Serve hot or cold.
