Caramelized Apple Pound Cake
Ingredients
4 eggs
8 C. sugar
8 medium apples peeled, cored and diced
1 C. vegetable oil
1 Tbsp. plus
1 tsp. vanilla extract
1 C. pecans, chopped
8 C. all-purpose flour
1 Tbsp. plus 1 tsp. baking soda
1 Tbsp. plus 1 tsp. cinnamon
Pinch salt
Cooking Instructions
Preheat oven to 350. Lightly grease and flour bottom and sides of 9×13-inch pan. Slightly beat eggs beat in sugar. Add apples, oil, vanilla and chopped pecans; mix thoroughly. In separate bowl, blend together flour, baking soda, cinnamon and salt. Once blended, mix dry ingredients with wet; combine thoroughly. Pour batter into prepared pan; bake 45 minutes at 350, or until cake tests done.
