California String Beans
Ingredients
2 lb. string beans
3 Tbsp. olive oil
1 onion, finely chopped
2 mild green chilies, chopped
1 small clove garlic, chopped
2 tomatoes, peeled and chopped
salt and pepper to taste
1 tsp. vinegar
boiling water
Cooking Instructions
Wash beans, string if necessary and cut into uniform 2″ pieces. Heat oil in a heavy skillet and add beans. Mix well. Add the onion, chilies, garlic, tomatoes, salt, pepper and vinegar. Add 1 Tbsp. boiling water and simmer, covered, until beans are tender. Add another Tbsp. water if necessary. Serves 8.
