Broccoli Polonaise
Ingredients
16 oz. frozen broccoli spears
1 Tbsp. butter or margarine
1/3 C. seasoned fine dry bread crumbs
2 Tbsp. parsley, minced
1/2 tsp. lemon rind, grated
1/8 tsp. ground cayenne pepper
1 large egg, hard-cooked and finely chopped
Cooking Instructions
In a large saucepan, cook broccoli according to package directions. Drain and arrange the broccoli on a platter. Meanwhile, in a small saucepan, heat the butter over moderate heat until lightly browned. Stir in the bread crumbs, parsley, lemon rind, ground cayenne pepper, and egg. Spoon over the broccoli. Serves 4.
