Black Eyed Pea Stew
Ingredients
1 C. black eyed peas, cooked
1 each onion, sliced
2 each tomatoes, chopped
1/2 each chili, chopped
1 Tbsp. palm oil*
salt and pepper
Cooking Instructions
Mash the cooked beans and set aside. Heat the oil in a pan and cook the onion and tomatoes a little before adding the mashed beans, chili and the rest of the seasonings. Let the mixture cook for 10 minutes or so until it combines well. Stir from time to time and add a little water if it becomes too dry. Serve hot with mashed yams, fried plantains or rice. *Use vegetable oil in place of palm oil
