Apple Black Walnut Cake
Ingredients
1 C. sugar
3/4 C. cooking oil
2 eggs
1 1/2 C. flour
1 C. black walnuts; chopped
1 tsp. baking soda
Dash salt
1 tsp. vanilla
2 C. unpeeled chopped apple
Icing
4 Tbsp. butter
1 tsp. vanilla
1/2 pound confectioner’s sugar
Cooking Instructions
Mix sugar and oil. Add eggs, beat until fluffy. Sift dry ingredients together and add to sugar, oil, and egg mixture. Blend in vanilla and fold in black walnuts and chopped apples. Pour into a greased and floured loaf pan. Bake at 350 for 40 minutes. Icing: Soften butter and blend with powdered sugar. Add vanilla. Use cream to blend to a spread able consistency. Spread on cake.
