Black Bean And Rice Salad
Ingredients
2 C. cooked or canned black beans (rinse and drained canned)
2 C. cooked rice
1 1/2 C. fresh cilantro
1/4 C. lime juice
3/4 C. oil
1/2 C. chopped onion
2 garlic cloves crushed
salt
freshly ground black pepper
Cooking Instructions
Mix the beans, rice, and cilantro together in a bowl. Place the lime juice in a small bowl and whisk in the oil. Add the onion and garlic and toss with the rice and beans. Add salt and pepper to taste.
