Beef Stew1
Ingredients
1 Tbsp. oil
1 1/2 pounds beef stew meat cut 3/4 inch cubes
4 medium carrots cut 1/2 inch slices
3 medium potatoes with peel cut 1/2 inch cubes
1 1/2 C. frozen pearl onions from 16 oz. package
1 celery rib cut 1 inch slices
3 C. vegetable juice cocktail

Cooking Instructions
In large skillet heat oil over medium high heat until hot. Add beef, cook 4 to 6 minutes or until browned. In 3 1/2 or 4 quart crock pot, combine browned beef and all remaining ingredients, mix well. Cover and cook on low for 9 to 10 hours or until beef and vegetables are tender.
