Mexican Chimichangas
Ingredients
6 (12″) flour tortillas
1 lb. ground beef
1 onion, chopped
1/2 tsp. cumin
2 Tbsp. chopped green chilies
1/2 Tbsp. chili powder
1 C. refried beans
1 C. grated Cheddar cheese
Oil for frying
Sour Cream for garnish
Guacamole for garnish
Cooking Instructions
Fry beef, drain, and add other ingredients. Wrap tortillas in foil, heat in 325º oven for 10 minutes. Spoon 3/4 C. meat mixture in each, near one edge. Fold edge nearest the filling up and over filling, just until mixture is covered. Fold in the 2 sides envelope fashion, then roll up. Fasten with toothpicks. In a heavy skillet, fry tortillas in 1/2 C. oil until golden brown on all sides. Drain on paper towels. Keep warm in 200º oven as you fry the rest. Garnish with guacamole and sour cream.
