Beef And Vegetable Fried Rice
Ingredients
1 lb. lean ground beef
2 cloves garlic, crushed
1 tsp. grated fresh ginger
or 1/4 tsp. ground ginger
2 tsp. vegetable oil
1 red bell pepper, cut into 1/2″ pieces
6 oz. pkg. frozen pea pods
3 C. cold cooked rice
3 Tbsp. soy sauce
2 tsp. dark sesame oil
1/4 C. thinly sliced green onions
Cooking Instructions
In a large nonstick skillet, brown ground beef, garlic and ginger over medium heat for 8 to 10 minutes or until beef is no longer pink, breaking up into 3/4″ crumbles. Remove with slotted spoon; pour off drippings. In same skillet, heat oil over medium-high heat until hot. Add bell pepper and pea pods; cook, stirring occasionally for 3 minutes or until bell pepper is crisp-tender. Add rice, soy sauce and sesame oil; mix well. Return beef to skillet; heat through, about 5 minutes. Stir in green onions before serving.
