Chocolate Chip Muffins
Ingredients
3 Tbsp. shortening
3/4 C. brown sugar
1 ounce tofu, mashed
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cream of tartar
3/4 C. water
1 C. chocolate chips
2 C. all purpose flour
Cooking Instructions
Cream together the shortening and brown sugar. Add the tofu. Mix in the baking powder, salt and cream of tartar. Mix thoroughly. Slowly blend in the water. Stir in the chocolate chips. Add the flour a C. at a time, mixing well after each addition. Spoon batter into oiled muffin tins. Bake in a preheated 350 degrees oven for 20 to 25 minutes, or when the tops are lightly browned.
