Sweet Potato Casserole
Ingredients
4 medium sweet potatoes
vegetable oil cooking spray
1 Tbsp. margarine
1/4 C. orange juice
2 Tbsp. chopped walnuts
1/4 tsp. nutmeg
Cooking Instructions
Cook whole sweet potatoes in boiling water 25 to 30 minutes, or until tender. Meanwhile, lightly spray a 1-quart casserole dish with cooking spray. Remove potatoes from heat; add cold water until they are cooled slightly. Drain, peel and mash potatoes. Add remaining ingredients; mix thoroughly. Place in casserole dish. Bake, uncovered, at 375 degrees F. for 25 minutes. Serve hot.
