{"id":10762,"date":"2026-02-15T19:02:50","date_gmt":"2026-02-15T19:02:50","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T19:02:50","modified_gmt":"2026-02-15T19:02:50","slug":"fresh-chile-and-corn-fritters-with-julienne-of-app","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/vegetarian\/blog\/2026\/02\/15\/fresh-chile-and-corn-fritters-with-julienne-of-app\/","title":{"rendered":"Fresh Chile And Corn Fritters With Julienne Of App"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>4 each green anaheim chiles<br \/>\n3 C. corn kernels, scraped from the cob<br \/>\n3 each green serrano chiles, seeded and chopped<br \/>\n1 tsp. salt<br \/>\n1\/2 tsp. white pepper<br \/>\n3 Tbsp. all purpose flour<br \/>\n3\/4 C. ghee<br \/>\n1 Tbsp. ghee<br \/>\n6 small green apples, cored and julienned<br \/>\n1\/2 tsp. celery seed<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Roast the anaheim chiles, then peel, seed and dice them. Process the corn in a food  processor until it resembles a puree, about 2 minutes. Scrape down with a spatula and  process for another minute. In a bowl, mix together the corn puree, the chopped chiles,  salt, and pepper. Slowly add the flour, small amounts at a time, while stirring. In a  medium saucepan, heat the clarified butter over high heat. Using a large cook&#8217;s spoon or  serving spoon, gently drop spoonfuls of the batter into the hot butter. When the edges are  brown after about 2 minutes, turn the fritters over and cook another 2 minutes. Remove  the fritters and allow them to drain on paper towels. In another saucepan over medium  high heat, melt the unsalted butter, add the apples and the celery seed, and Saute about 3  minutes, until they begin to soften.
