{"id":10746,"date":"2026-02-15T19:02:50","date_gmt":"2026-02-15T19:02:50","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T19:02:50","modified_gmt":"2026-02-15T19:02:50","slug":"fragrant-vegetable-stew-jhalfaraazi","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/vegetarian\/blog\/2026\/02\/15\/fragrant-vegetable-stew-jhalfaraazi\/","title":{"rendered":"Fragrant Vegetable Stew (Jhalfaraazi)"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>2 Tbsp. olive oil<br \/>\n1 Tbsp. bengali 5 spice (panch puran)<br \/>\n1 tsp. turmeric<br \/>\n1\/4 tsp. crushed red chili flakes<br \/>\n1 C.(s) chopped red onion<br \/>\n4 garlic cloves minced<br \/>\n2 C.(s) shredded green cabbage<br \/>\n3 C.(s) cubed zucchini (about 1\/4 thick)<br \/>\n1 whole japanese eggplant sliced 1\/2 thick<br \/>\n2 C.(s) cooked chickpeas with liquid reserved<br \/>\n2 C.(s) tomato sauce<br \/>\n2 Tbsp. tomato paste<br \/>\n1\/2 tsp. sea salt<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Perfumed with benali 5 spice (panch puran), this tasty melange of vegetables is  wonderful with basmati rice.  Directions: In a large saucepan, Saute bengali 5 spice in oil until fragrant and popping.  Add turmeric and chili, and Saute for 2 minutes. Stir in onion, garlic and cabbage and  cook until soft. Add zucchini, eggplant, chickpeas and 1\/2 C. of chickpea liquid. Cook  over medium heat for 10 minutes. Stir in tomato sauce and tomato paste.
