{"id":10681,"date":"2026-02-15T19:02:49","date_gmt":"2026-02-15T19:02:49","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T19:02:49","modified_gmt":"2026-02-15T19:02:49","slug":"eggplants-with-apples","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/vegetarian\/blog\/2026\/02\/15\/eggplants-with-apples\/","title":{"rendered":"Eggplants With Apples"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>1 1\/4 pound eggplant<br \/>\n2 large granny smith apples<br \/>\n1\/4 tsp. fennel seeds, ground<br \/>\n1\/2 tsp. salt<br \/>\n1\/4 tsp. turmeric<br \/>\n1\/4 tsp. cayenne<br \/>\n1\/2 C.(s) mustard oil<br \/>\n1\/8 tsp. asafetida<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Cut eggplants into 3\/4 slices. Cut apples into wedges and core. Combine fennel, salt,  turmeric and cayenne in a small bowl and add 1 tb water. Mix into a paste.  Heat oil in a large skillet until very hot. Add asafetida, followed immediately by apple.  Brown lightly and then remove. Add as many eggplant slices as you can and brown both  sides. Set aside with the apple. Do all the eggplant in this way.  Return eggplant and apple to skillet and add paste. Turn heat to low and fry gently for 10  minutes.
