{"id":177,"date":"2026-02-22T23:29:20","date_gmt":"2026-02-22T23:29:20","guid":{"rendered":"https:\/\/recipes4thecook.com\/vegetable-mafe"},"modified":"2026-02-22T23:29:20","modified_gmt":"2026-02-22T23:29:20","slug":"vegetable-mafe","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/vegetable\/blog\/2026\/02\/22\/vegetable-mafe\/","title":{"rendered":"Vegetable Mafe"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>2 large onions, chopped<br \/>\n4 Tbsp. peanut oil<br \/>\n2 C.(s) squash<br \/>\n4 each turnips<br \/>\n4 medium potatoes, quartered<br \/>\n2 large carrots, chopped<br \/>\n1\/2 small cabbage, chopped<br \/>\n2 large tomatoes, chopped<br \/>\n1 bunch chard<br \/>\n2 each chili peppers<br \/>\n2 C.(s) tomato sauce<br \/>\n3\/4 C.(s) peanut butter<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Brown the onions in a moderately hot oil in a large skillet. Add vegetables one at a time  sauteing each one for a minute or two before adding the next. Stir in tomato sauce and  about a C. of water. Reduce heat and simmer till all the vegetables are tender. Spoon  out half a C. of the broth and mix it with the peanut butter to make a smooth paste.  Return to the pot and simmer for 15 minutes.
