{"id":105,"date":"2026-02-22T23:29:19","date_gmt":"2026-02-22T23:29:19","guid":{"rendered":"https:\/\/recipes4thecook.com\/lentil-vegetable-salad"},"modified":"2026-02-22T23:29:19","modified_gmt":"2026-02-22T23:29:19","slug":"lentil-vegetable-salad","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/vegetable\/blog\/2026\/02\/22\/lentil-vegetable-salad\/","title":{"rendered":"Lentil Vegetable Salad"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>1 C. red lentils<br \/>\n3 C. chicken broth<br \/>\n1 bay leaf<br \/>\n1\/4 tsp. dried leaf marjoram<br \/>\n1\/4 tsp. dried leaf thyme<br \/>\n1 tsp. virgin olive oil<br \/>\n1 medium carrot, chopped<br \/>\n1 medium celery stalk, chopped<br \/>\n2 green onions, chopped<br \/>\n1\/4 tsp. hot pepper flakes (optional)<br \/>\n1<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Rinse lentils and place in a saucepan with broth, bay leaf, marjoram and thyme. Bring to  a boil. Reduce heat and simmer, uncovered, 30 minutes or until tender. Drain in a  colander. Heat oil in a nonstick saucepan; stir fry vegetables 3 minutes. Add lentils, hot  pepper, water chestnuts and vinaigrette.
