{"id":78,"date":"2026-02-22T23:26:42","date_gmt":"2026-02-22T23:26:42","guid":{"rendered":"https:\/\/recipes4thecook.com\/corn-and-pumpkin-stew"},"modified":"2026-02-22T23:26:42","modified_gmt":"2026-02-22T23:26:42","slug":"corn-and-pumpkin-stew","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/stew\/blog\/2026\/02\/22\/corn-and-pumpkin-stew\/","title":{"rendered":"Corn And Pumpkin Stew"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>4 C. frozen silver queen corn<br \/>\n4 C. peeled, diced pumpkin<br \/>\n2 garlic cloves, mashed<br \/>\n1 1\/2 tsp. salt<br \/>\n1\/2 tsp. white pepper or to taste<br \/>\n2 C. water<br \/>\n1\/2 C. ground pine nuts or cashews<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Place the corn in a blender or food processor and puree. Transfer the corn into a heavy  bottomed pot and add the rest of the ingredients except for the ground nuts. Bring to a  boil and then simmer for 25 minutes or until the pumpkin is tender. Add more water only  if necessary.  Add the pine nuts and stir.  Bring back to a boil. The mixture should be very thick.
