{"id":62,"date":"2026-02-22T23:26:42","date_gmt":"2026-02-22T23:26:42","guid":{"rendered":"https:\/\/recipes4thecook.com\/caribbean-stewed-chicken"},"modified":"2026-02-22T23:26:42","modified_gmt":"2026-02-22T23:26:42","slug":"caribbean-stewed-chicken","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/stew\/blog\/2026\/02\/22\/caribbean-stewed-chicken\/","title":{"rendered":"Caribbean Stewed Chicken"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>3 lb. chicken pieces<br \/>\n1 large onion, chopped<br \/>\n1 large tomato, coarsely chopped<br \/>\n2 Tbsp. fresh lime, or lemon juice<br \/>\n1 Tbsp. fresh parsley, chopped<br \/>\n1\/2 tsp. dried thyme<br \/>\n1\/2 tsp. dried rosemary<br \/>\n1\/4 tsp. ground ginger<br \/>\n1\/4 tsp. cinnamon<br \/>\n3 C. water<br \/>\n1\/2 tsp. salt (optional)<br \/>\n1\/4 tsp. freshly ground pepper<br \/>\n1 Tbsp. margarine<br \/>\n2 Tbsp. flour<br \/>\n1\/4 tsp. nutmeg<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Remove skin and all visible fat from chicken pieces. Place chicken, onion, tomato, lime juice, parsley, thyme, rosemary, ginger and cinnamon in a glass bowl. Cover and let stand in refrigerator 2 hour to marinate. Transfer to a Dutch oven or stewing pot. Add water, salt (optional), and pepper. Cover and bring to a boil. Reduce heat and simmer 1-1\/2 hours, or until tender (start checking after 1 hour). Melt margarine in a small saucepan. Stir in flour and nutmeg until blended. Remove and strain 1-1\/2 cup liquid from stew, and add to flour mixture. Stir cook about 2 minutes until thickened. Place chicken pieces on a warm platter. Serve with sauce.
