{"id":116,"date":"2026-02-22T19:30:24","date_gmt":"2026-02-22T19:30:24","guid":{"rendered":"https:\/\/recipes4thecook.com\/chilled-orange-carrot-soup"},"modified":"2026-02-22T19:30:24","modified_gmt":"2026-02-22T19:30:24","slug":"chilled-orange-carrot-soup","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/soup\/blog\/2026\/02\/22\/chilled-orange-carrot-soup\/","title":{"rendered":"Chilled Orange Carrot Soup"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>3\/4 tsp. ginger, grated<br \/>\n8 each carrots, thinly sliced<br \/>\n3\/4 C. leeks, white parts only,<br \/>\nsliced<br \/>\n3 Tbsp. margarine<br \/>\n4 C. vegetable broth<br \/>\n2 C. orange juice<br \/>\nsalt<br \/>\nwhite pepper<br \/>\n1 each orange, halved and sliced<br \/>\n10 each mint sprigs<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Saute ginger, carrots and leeks in margarine until the leeks are tender, about 4 minutes.  Add 3 C. of broth, cover and simmer until the carrots are tender, about 35 minutes.  Remove from heat and allow to cool.  Transfer to food processor and puree until smooth. Return to pot, stir in remaining broth  and half the orange juice. Add remaining juice 1 Tbls. at a time until the  consistency is that of a thin soup. Season and chill.
