Frische Tomatensuppe (Fresh Tomato Soup)
Ingredients
6 medium tomatoes
1 each onion, chopped
1 each celery stalk, chopped
2 C.(s) stock
1 Tbsp. tomato paste
1/2 tsp. basil
1/4 tsp. pepper
1/2 tsp. salt
Cooking Instructions
Cut tomatoes into wedges and place in 1 1/2 quart saucepan with all ingredients. Simmer uncovered 30 minutes. Strain to remove tomato skins and seeds. Adjust seasonings. Serve hot.
