{"id":9309,"date":"2026-02-15T18:59:00","date_gmt":"2026-02-15T18:59:00","guid":{"rendered":"https:\/\/recipe4thecook.com\/\/"},"modified":"2026-02-15T18:59:00","modified_gmt":"2026-02-15T18:59:00","slug":"french-fish-chowder","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/seafood\/blog\/2026\/02\/15\/french-fish-chowder\/","title":{"rendered":"French  Fish  Chowder"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>3\/4 lb. skinless, boneless codfish<br \/>\n3\/4 lb. skinless, boneless halibut or<br \/>\n   red snapper<br \/>\n3 Tbsp. olive oil<br \/>\n1\/2 C. finely chopped onions<br \/>\n1 C. finely chopped celery<br \/>\n1 Tbsp. finely chopped garlic<br \/>\n1 C. diced red or green pepper<br \/>\n2 tsp. turmeric<br \/>\n1\/4 tsp. saffron stems (opt.)<br \/>\n1 C. dry white wine<br \/>\n3 C. canned crushed tomatoes<br \/>\n1 bay leaf<br \/>\n2 sprigs fresh thyme or 1 tsp. dried<br \/>\n1\/4 tsp. dried red pepper flakes<br \/>\n4 C. fish broth or water<br \/>\nSalt &amp; freshly ground pepper<br \/>\n1\/2 C. orzo<br \/>\n1\/4 C. chopped fresh basil or Italian<br \/>\n   parsley<br \/>\nGarlic croutons (see recipe)<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Cut the fish into 1 inch cubes.  Heat the oil in a large saucepan or kettle, and add the onions, celery, garlic and peppers.  Cook, stirring, over medium heat, about 5 minutes.  Add turmeric, saffron, wine, tomatoes, bay leaf, thyme, pepper flakes, fish broth or water, salt and pepper.  Bring to a boil and simmer for 5 minutes.  Add the orzo, stir well and simmer for 7 to 8 minutes or until the orzo is tender.  Add the fish, stir, bring to a boil and simmer for 3 minutes.  Remove the bay leaf, sprinkle with basil and serve with the garlic croutons.
