{"id":37,"date":"2026-02-22T23:31:38","date_gmt":"2026-02-22T23:31:38","guid":{"rendered":"https:\/\/recipes4thecook.com\/bean-and-cashew-nut-salad"},"modified":"2026-02-22T23:31:38","modified_gmt":"2026-02-22T23:31:38","slug":"bean-and-cashew-nut-salad","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/salad\/blog\/2026\/02\/22\/bean-and-cashew-nut-salad\/","title":{"rendered":"Bean And Cashew Nut Salad"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>1 C. dried lima beans soaked overnight or. . .<br \/>\n30 ounce canned lima beans<br \/>\n1 C. blackeye peas freshly cooked or canned<br \/>\n2 celery sticks finely chopped<br \/>\n1 small red sweet pepper seeded and finely chopped<br \/>\n2 Tbsp. roasted cashew nuts (or more to taste)<br \/>\n2 green onions chopped<br \/>\n1 Tbsp. tomato sauce (ketchup)<br \/>\n1 garlic clove crushed<br \/>\nsalt and pepper to taste<br \/>\n1\/4 tsp. cumin or jeera, ground<br \/>\n3 Tbsp. balsamic or wine vinegar<br \/>\n6 Tbsp. olive oil<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>In a large bowl, mix the drained beans with the celery and sweet pepper. Roast the  cashew nuts, in a dry frying pan, until browned. Put on paper towels and allow to cool.  When cool, toss into the beans with the green onions. Mix the tomato sauce, garlic, salt,  pepper, cumin, vinegar and olive oil together well. Pour over the beans and mix well.
