{"id":195,"date":"2026-02-22T23:31:40","date_gmt":"2026-02-22T23:31:40","guid":{"rendered":"https:\/\/recipes4thecook.com\/lentil-confetti-salad"},"modified":"2026-02-22T23:31:40","modified_gmt":"2026-02-22T23:31:40","slug":"lentil-confetti-salad","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/salad\/blog\/2026\/02\/22\/lentil-confetti-salad\/","title":{"rendered":"Lentil Confetti Salad"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>1\/2 C. lentils<br \/>\n1 1\/2 C. water<br \/>\n1 tsp. salt (or omit)<br \/>\n1 C. cooked brown rice (can substitute white rice)<br \/>\n1\/2 C. tomatoes, diced<br \/>\n1\/4 C. green pepper, chopped<br \/>\n3 tsp. onion, chopped<br \/>\n2 Tbsp. celery, chopped<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Wash and drain lentils.  Heat water and salt (or omit) to boiling, add lentils and simmer (covered) for 20 minutes.  Drain immediately and combine with cooked rice.  Cool.  Add chopped vegetables (I never measure).  Mix with 1\/2 cup Italian dressing (or less).  Serve on bed of lettuce and garnish with parsley. A great vegetarian salad.
