Szechwan peanut dressing<br \/>\ngarnish: raisins, toasted sesame seeds, fresh watercress sprigs, or unsalted peanuts,<br \/>\noptional<br \/>\n1\/3 C. peanut butter, smooth or crunchy<br \/>\n1\/2 C. hot vegetable stock or hot water<br \/>\n1 tsp. soy sauce<br \/>\n2 Tbsp. rice vinegar<br \/>\n2 Tbsp. safflower oil<br \/>\n2 cloves garlic, minced<br \/>\n1\/2 tsp. dry crushed red pepper<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>In a large bowl, gently toss together salad ingredients. In a small bowl, combine dressing  ingredients. Pour over salad and toss again. Top with garnish. Advance preparation:  both salad ingredients and dressing may be prepared in advance and refrigerated.
