{"id":65,"date":"2026-02-22T22:10:38","date_gmt":"2026-02-22T22:10:38","guid":{"rendered":"https:\/\/recipes4thecook.com\/cajun-rice"},"modified":"2026-02-22T22:10:38","modified_gmt":"2026-02-22T22:10:38","slug":"cajun-rice","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/rice\/blog\/2026\/02\/22\/cajun-rice\/","title":{"rendered":"Cajun Rice"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>1 each yellow onion, chopped<br \/>\n1 each green pepper, chopped<br \/>\n1 bunch scallions, chopped<br \/>\n2 each garlic clove, crushed<br \/>\n1\/2 pound mushrooms sliced<br \/>\n1 can tomatoes, stewed<br \/>\n1\/4 C. green chiles, chopped<br \/>\n1 tsp. chili powder<br \/>\n1 tsp. cajun spice mix<br \/>\n1\/4 C. cilantro, chopped<br \/>\n1 dash Tabasco sauce<br \/>\n4 C. cooked brown rice<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Saute the onion, green pepper, scallions, garlic, and mushrooms in a small amount of  water for 5 to 10 minutes. Add the remaining ingredients (except rice) and mix well. Stir  in the cooked rice, heat through, and serve.  Note: some commercial cajun spice mixes are now available. To make  Your own, combine  3 tsp. paprika  2 tsp. onion powder  2 tsp. ground black pepper  2 tsp. ground white pepper  2 tsp. cayenne  1 tsp. oregano  1 tsp. thyme  1\/2 tsp. celery seed.  Mix together and store in a tightly covered container.
