Italian Arborio rice<br \/>\n2 C. vegetable stock<br \/>\n1\/4 tsp. salt<br \/>\npepper to taste<br \/>\n2 Tbsp. parmesan cheese, or Romano cheese<br \/>\ngreen onion, peas, sliced mushrooms, clams, shrimp, lean hamburger or chicken (opt<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>In a medium-sized nonstick saucepan, heat oil. Saute onion until tender. Add other  optional ingredients, as desired. Add rice. Cook until mixed, stirring, 2 or 3 minutes. Add  stock and salt. Bring to a boil. Cover and simmer 20 minutes. Remove from heat. Turn  rice into a warm dish. Season with pepper.
