{"id":189,"date":"2026-02-22T22:10:39","date_gmt":"2026-02-22T22:10:39","guid":{"rendered":"https:\/\/recipes4thecook.com\/pheasant-wild-rice-en-casserole"},"modified":"2026-02-22T22:10:39","modified_gmt":"2026-02-22T22:10:39","slug":"pheasant-wild-rice-en-casserole","status":"publish","type":"post","link":"https:\/\/recipes4thecook.com\/rice\/blog\/2026\/02\/22\/pheasant-wild-rice-en-casserole\/","title":{"rendered":"Pheasant Wild Rice En Casserole"},"content":{"rendered":"<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Ingredients<\/font><\/b><\/p>\n<p>1\/2 lb. bacon, diced<br \/>\n1 med. size onion, diced<br \/>\n1 C. fresh mushrooms, sliced<br \/>\n1 green pepper, diced<br \/>\n1\/2 C. diced pimiento<br \/>\n3 Tbsp. flour<br \/>\n3 C. half and half, hot<br \/>\n3 C. cooked wild rice<br \/>\n3-4 C. diced, cooked pheasant<br \/>\n1\/4 C. sherry wine<br \/>\n1 C. grated Swiss cheese (M<\/p>\n<p align=\"left\"><b><font face=\"comic sans ms\" size=\"5\">Cooking Instructions<\/font><\/b><\/p>\n<p>Fry diced bacon until crisp.  Drain off fat and reserve.  Reserve crisp bacon. Add half of bacon fat to a skillet and saute onion, mushrooms and green peppers until semi-crisp.  Add pimiento.  Meantime, in a saucepan add remaining bacon and flour and cook for 2 minutes. Add hot half and half and whisk until smooth.  Add sherry and simmer 3 minutes.  Mix the reserved crisp bacon, sauteed vegetables, sauce, wild rice and diced pheasant, together and place in an oiled baking dish for 45 minutes. Sprinkle grated cheese on top.
