Coconut Rice Pudding
Ingredients
1 C. short grain rice
1/2 C. skim milk
sweetener equal to 6 tsp. sugar
1 tsp. vanilla
1 Tbsp. shredded coconut, unsweetened
Cooking Instructions
In a saucepan, combine cooked rice, skim milk, artificial sweetener, vanilla and coconut. Bring to a boil. Reduce heat and simmer, stirring, occasionally, for 5 minutes, or until most of moisture evaporates, rice kernels stick together, and mixture is creamy.
